Virgil's Plate - Maggio Review

What We Liked:  This was our first trip to Virgil's and it was in a nice location, clean, and we were greeted by the owner when we first entered.  Their signature style is offering pizza by the square.  A large pizza has 12 squares and you can customize each individual square as you'd like.  As for the pizza itself, aesthetically...just look at it.  Where would you find pizza like this elsewhere in town?  We've been to almost every pizza shop and none of them look like a culinary work of art.  Clearly, the owner has put thought into the combination of toppings, quality of ingredients, and presentation.  The other employees were even dressed to fit the part of a "chef".  Being a white pizza, it had a garlic infused olive oil and wasn't the typical greasy, salty, buttery, white sauce offered most everywhere else.  Because of this, the flavors of the other toppings really stood out.  Fresh spinach, not frozen.  Fresh tomatoes.  Fresh onions.  You get the idea.  This looks and tastes like a high quality product and has a very authentic taste.  Bravo.
What We Didn’t Like: The crust is par-baked.  We understand the necessity of having a par baked crust when offering 12 individual squares.  However, this is the only downside of their pizza, which is not having that fresh chewy crust you'd expect from a freshly baked pizza.  Regardless, the crust was pretty good despite it being par-baked. 
Overall:  Brian was impressed by all of the things we liked enough to forgive the par-baked crust, but that's always been a sticking point for Jen, and we've graded other restaurants accordingly already.  We wanted to give the Maggio five stars, but felt there was still some slight room for improvement...if they offered it with a freshly baked crust.
